japanese spicy noodles with broth?
Ok so I recently went to a restaurant called Kotobuki in NY. They gave us these complimentary soba nododles along side a small bowl with this hot dipping broth like sauce. It was kind of clear/brown, salty and spicy but kind of sweet not too much. You dunk the noodles in this and eat them. I still havent figured out how to make it or what is even called... can anybody help me??
could it have been the miso soup? or was it a spicy ponzu sauce? here's the website for the restaurant you went to:
www.kotobukibistro.com
They have their complete menu with photos so you can see. you might try calling them to ask them what that sauce was called. I'd be willing to bet it was a spicy ponzu sauce which is very easy to make. it's just a citrus juice (usually orange), soy sauce, rice vinegar, bonito flakes, and kombu (kelp) squares. (add a little sugar if you want it sweeter, and some chili flake if you want it spicier) basically add all ingredients to a sauce pan and let them sit for about 15 - 30 minutes. then, over low heat bring up to a boil. once it starts boiling, remove from heat. let sit until cooled, strain, serve. 1/4 c soy sauce, 1/2 c rice vinegar, 1/4 c orange juice, 2 tbsp bonito flakes, 1 one inch square kombu, sugar or chili flake to taste., makes one cup ponzu. Hope this helps!
