I think the outside will be alright I'm more interested in how to hollow them out.

You drill a large hole at an angle from the heel toward the toe and then use a scoop shaped gouge to remove the inner wood away from the hole toward the sides and top. Here is one image http://commons.wikimedia.org/wiki/File:Carving_wooden_shoes.jpg
